Dilly Delight Summer Salad

With a delightful mixture of flavors and textures, this refreshing salad will be a favorite all summer long.  Dill gives the salad a fresh taste; pasta adds structure, but doesn’t dominate.  A bowl will work fine for a mold, but a pretty gelatin mold will create a beautiful dish.

Dilly Delight Summer Salad is perfect for luncheons, potlucks, or teas.

 

DILLY DELIGHT SUMMER SALAD

Serves 4

  • 1 cup uncooked elbow macaroni
  • 1 large boneless chicken breast, cooked and chopped (about 1 ½ cups)
  • 1 cup grated carrot
  • 1/2 cup chopped celery
  • 1/4 cup green onion, thinly sliced
  • 1 1/2 cups cottage cheese
  • 1 tablespoon finely chopped fresh dill
  • 1/4 cup sour cream
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Radish roses or sprigs of dill for decoration

  1. Cook macaroni in boiling water for approximately 5 minutes. Don’t overcook; it should be “al dente”– a little on the firm side. Rinse with cold water and drain well.
  2. In a large bowl, stir together all of the ingredients. Stir until thoroughly combined.
  3. Lightly grease a 1-quart bowl or gelatin mold. Press the mixture firmly into the mold.
  4. Cover and refrigerate at least 3 hours.
  5. Turn out onto a plate and decorate with radish roses or sprigs of dill.

    I have a ton of dill in my herb garden. I’ve never seen cheese curd before – it looks a bit like cottage cheese!

    For a minute there, I thought it had crab meat in it. I guess it was the carrots. I’m allergic to shelled fish, so I have to steer clear of crab meat. Knowing that this has chicken and all those other yummies, I have to try this! It looks awesome!
