Baked Parmesan Crusted Zucchini

Since my Crunchy Baked Onions Rings with Panko Crumbs was so popular last year I thought you guys might also enjoy this awesome Baked Parmesan Crusted Zucchini! I have been trying to make better food choices since the beginning of the year and these bad boys tasted like Heaven to my taste buds!

Baked Parmesan Crusted Zucchini

Baked Parmesan Crusted Zucchini

Prep: 15 minutes

Cook: 30 minutes

Total: 45 minutes

Servings: 8

 

Ingredients

  • 2 large organic zucchinis
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup plain gluten-free bread crumbs
  • 1 tbsp. organic extra virgin olive oil
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 pinch parsley
  • 1 pinch basil
  • 1 pinch salt
  • 1 pinch pepper

 

Instructions

Preheat oven to 450 degrees F.

Baked Zucchini In Process 1

Rinse organic zucchini and dry with paper towels. Cut zucchini into a variety of thin to medium size slices.

Baked Zucchini In Process 2

Combine plain gluten-free breadcrumbs, freshly grated Parmesan cheese, onion powder, garlic powder, parsley, basil, salt, and pepper in medium size mixing bowl. Stir mixture with fork.

Baked Zucchini In Process 5

Rub a thin layer of olive oil onto baking pan. Pour organic extra virgin olive oil into a medium size mixing bowl. Dip each zucchini round into olive oil, coating it on all sides. Then, dip the zucchini into breadcrumb concoction, covering both sides evenly. Place each zucchini round onto baking pan.

    What a great alternative to chips or fries! These look so tasty! I’ve done Parmesan baked green beans, but I haven’t tried zucchini. Thanks for the idea!
