Around our house we absolutely love cooking in the crock pot. It’s easy and really saves a lot of time that I could be spending with my children. I have decided to start including recipes for the crock pot for you guys to enjoy. The first crock pot recipe on the list will be our famous crock pot Stuffed Pepper Stew. Not only is it delicious for adults but both of my kids really enjoy it. I hope your do too!

Crock Pot Stuffed Pepper Stew
Ingredients:
- 1 lb extra lean ground beef
- 1 cup onion, chopped
- 14.5 oz. can diced tomatoes with roasted garlic and onions
- 15 oz. can tomato sauce
- 2 cups green and red peppers, chopped
- 3 cups beef broth
- 1⁄2 teaspoon dried basil
- 1 cup cooked rice
Chop 1 cup each of red and green peppers and toss into crock pot.
Brown your ground beef with the onion in a large skillet over medium heat.
Drain ground beef and onion mixture and place in your crock pot.
Add in tomatoes (including juice), green and red peppers, 3 cups beef broth, and 1/2 tsp dried basil into crock pot.
Cover and cook on low for 6-8 hours. (Rice should be added in approx. 1 hour before cooking time is finished).
